PYRC #53: 5-Ingredient Easy White Chicken "Chili"

Y'all, I've never been dubbed a soup maker, but I'm starting to realize that it really doesn't take much to make some really awesome soup (of course topped with a pile of cheese). Here's another Pinterest recipe that had my household scrambling back for seconds, 5-Ingredient Easy White Chicken Chili, aka salsa verde chicken soup.






As I always say (broken record, yeah yeah, I know), "THIS RECIPE IS EASY." Actually, really delicious at-home soups that don't have fancy pantsy names do tend to be less complex, so I'm starting to learn. Maybe that's why people make soup so much.

This recipe, which had me initially scrunching my nose (because I really wanted to make my fave taco soup), called for the following:

Ingredients
  • 6 C chicken broth (low-sodium broth optional)
  • 4 C shredded chicken, cooked
  • 2 15 oz. cans Great Northern beans, drained (in the bean aisle)
  • 2 cups salsa verde (in the Mexican aisle)
  • Optional toppings: avocado, cheese, green onion, cilantro, tortilla chips
How do you make it?
  1. Mix all ingredients in a saucepan and stir to combine
  2. Cook on medium-high heat till boiling, then cover and reduce heat to medium-low
  3. Let simmer for at least 5 minutes
  4. Top with cheese (and any other topping you desire) and devour
  5. Repeat step 4
I don't know where the title "chili" really comes in. This reminds me more of tortilla soup, but you can go with whatever floats your boat.

USER CAUTION! Ok, note to self... and to you... too much of this soup can make your stomach hurt. While the salsa verde gives it EXCELLENT flavor (despite the fact that it sounds weird), it's a pretty strong flavor and sodium levels for a bowl are high. ANOTHER CAUTION! Don't over-season with things like salt and pepper. I was tempted, but I didn't and was glad I refrained. POSSIBLE SUGGESTION. You could use low-sodium chicken broth to drop some of the salt. I contemplated it when grocery shopping but didn't want to ruin the soup. First round of eating it, perfect. But after letting it sit overnight, the flavors meddled and the salt came alive. My stomach hurting may have also had something to do with my THIRD bowl of soup and CHEESE, so if you have a normal size family to help you indulge (that's more than two people), then you can probably disregard 75% of the aforementioned suggestions.
